Jesus! Talk about muscle soreness walking up and down the hills! But that is good! Feels great actually. 

Being in nature, having your feet on the earth and your hands in the earth, you feel grounded because that is what nature does. Only the birds singing and the wind rustling in the trees. Nature just is…and we can relax and just be.

Seeing the crop grow every time I go there is very reassuring. Soon I will be able to eat lettuce leaves and cilantro to start with. ☺

After hard work in the bush for 3,5 hours it’s time for lunch.

The lunch consists of a fresh coconut, or two ☺ and its water. I didn’t like coconut water before I came here. The ones in a plastic bottle you can find in stores are not the same thing, obviously.

But this! The fresh water out of the coconut is a different ball game! Depending on the type of coconut, if it’s orange or green, the water is either sweeter or sourer. It’s packed with potassium, manganese, folate, calcium and magnesium, to name a few minerals. 

The coconut water has a similar electrolyte composition as human blood. That is why it’s such a perfect substitute for mother’s milk!

So if you are having trouble breastfeeding, you can give your baby coconut water instead.

It regulates blood pressure for one thing, helps in weight loss, lowers cholesterol, boosts energy and reduces cellulites. 

If you can’t get a fresh coconut, look for “cold pressure coconut water” in the store. It has not been heated up. The pressure eliminates bacteria but leaves the vitamins and minerals in tact. Bottom line; read the labels and see to that they haven’t added sugar and preservatives!

Here comes a little recipe you can use to boost your hydration:

  • 4 ounces coconut water
  • 1 peeled lime
  • 1 whole cucumber
  • 4 celery stalks

You can either juice them in a juicer, or mix them well in a mixer. Remember to “chew” every gulp of it to be able to blend with your saliva, because it’s the saliva that breaks it down in the stomach. If you just drink it down, there will be no saliva to break it down, thus giving you stomach ache.
